Chocolate Raspberry Cheesecake



The recipe for Disco has been requested…so here it is!!! (Sorry everyone…can’t share the cheesecake recipe.)
Will Serve a lot of people! LOL….around a dozen, depending on how much they eat. Cut amounts depending on how big your group is. This is a great..EASY recipe for family/friend gatherings.

Prep Time: Depends on how long it takes you to chop stuff up! 😉

Cook Time: Approx: 30 min.

2lbs Ground Beef
2lbs Ground Pork
1/2 lb Bacon – chopped
1/2 lb Ham
2 Regular size onions – chopped
3-4 Regular size tomatoes – chopped
1/2 bunch Cilantro – chopped
1 head Garlic
Jalapenos – chopped
Tortillas
Cheese
Limes – quartered

Cook meats, blending well…season with salt as desired. When meats are about done, mix in onions and garlic and cook till onions are done (they will look sort-of transparent). Remove from heat and mix in tomatoes and half of cilantro..setting the other half aside for use fresh if desired. Your dish will be plenty warm enough to warm the tomatoes. You don’t want them to cook. Warm tortillas and Serve with cheese, jalapenos, fresh cilantro and lime juice as desired!!

I use very technical terms as you noticed! LOL..NOT! I hope you all enjoy it as much as we do!!

Ok...so you got that new cutting board you were wanting. Now what do you do with your old one? I have a few ideas that might come in handy while helping to prevent excess or unnecessary waste. Either wood or plastic boards can be used with most of these ideas. Use common sense when it comes to that.

1. Hang the cutting board on a nail on the pantry wall and screw several small hooks into its surface. Hang spare keys for the doors, car, shed, etc. on the hooks.

2. Park it in your workshop and let the cutting board take the damage – rather than your workbench – anytime you’re nailing, pounding, gluing or soldering. (Wood Board)

3. Take it into the garden and use it as a portable, temporary stepping stone for hard to reach places. Or add a padded top and “Voila” you have a sturdy knee pad.

4. Paint a nice scene on it, seal the whole thing with polyurethane and hang it on the wall.

5. Take it camping and throw it in the fire once you’ve used it to prepare the last meal of the trip. No Clean-up and you don’t have to take it back home. (Only do this with wood.)

6. Use it as an outdoor signboard. Paint your message on it, tie a loop of nylon rope to it, and hang outside.

7. Make a chalkboard. Paint with chalk board paint and you have an instant portable chalkboard. Attach a loop of rope and hang on the wall for a message board. (It is best to sand it smooth first.)

8. Stow it into the trunk of your car and put into service as a portable, all-purpose hard surface. Passengers can use it as a lap desk for writing, coloring or crafting. It can also be used when you need to look under the car and don’t want to get your knees dirty…or slide it under your jack when you need to change a tire on soft ground.

9. Make a game board. Paint a checker board pattern on it to create a new play area for the checkers/chess fans in your family. Or create your game board using mosaic tiles. Imagine the possibilities!

10. Put it in with your crafts to use as a cutting mat or as a surface protector when gluing.

Who knew there were so many ways to use that old cutting board?

Yes! You read correctly. I am learning to survive…..without my children. They have gone to spend a few weeks with my parents for the summer. I have not been without all of my children, for any great length of time, in ages. You are probably thinking “Vacation!”. LOL At first I thought, “yep, this will be nice”. However, I am finding it harder and more debilitating than I imagined.

You might be asking….How could it possibly be debilitating? I have been thinking about this myself and have come to the conclusion that I don’t know what to do with myself. I don’t know how to “be still” and I miss them like crazy. 🙂 I have the hardest time trying to accomplish goals that I set for the day…simply because….I miss them. I am lonely and find my own company boring. Does this mean I’m boring when they are here? That is something only they could tell you, I guess.

I have things I like to do…but no one to do them with. There is just something about having my children around me…I think I need them more than they need me. 🙂 With them close to me, I stay so busy…Without them, I am lost.

So….this is why I am learning to survive without them. I am learning to slow down and look at what is around me. I am learning that I don’t always have to be busy to accomplish what is important. I am finding that I have time for exercise and personal scripture study. I am learning to appreciate all the little things that my children do for me. The things they do mean so much to be but are easily overlooked during the frantic rush of life. The funny thing is, I have always known how much I appreciate them but I had become so pre-occupied with what needs done next that I wasn’t spending the time just enjoying being myself and being “with them”, or letting them know how much I appreciate what they do.

So…Survival 101: I will focus on myself…so that I can focus on my family. I will not become obsessed with the little things that mean nothing.  I am learning to slow down and pay attention to what matters the most. I love the talk given my Dieter F. Uchtdorf during General Conference about the Moments that Matter Most!  I like this quote “We would do well to slow down a little, focus on the significant, lift up our eyes, and truly see the things that matter most.” & “There is a beauty and clarity that comes from simplicity that we sometimes do not appreciate in our thirst for intricate solutions.” This is what I need to practice…simplicity.

When my children are back in my arms I hope to have become a better individual…happier with who I am…stronger.. so that I can be an even better mom and wife. I LOVE being a MOM. I wouldn’t trade it for any other job in the world.

Jumping On the Bed

Ya gotta love women~
A fifty-ish woman was at home, happily jumping on her bed and squealing with delight.

Her husband watched her for a while and asked, “Do you have any idea how ridiculous you look? What’s the matter with you?”

The woman continued to bounce on the bed and said, “I don’t care. I just came from having a mammogram and the doctor says I have the breasts of an 18 year-old”.

The husband said, “What did he say about your 56-year-old ass?”

“Your name never came up,” she replied.
